2 bags (1 pound each) frozen white pearl onions, thawed
1 bay leaf
2 thyme sprigs, plus more for garnish
1/3 cup red wine vinegar
1/2 cup dry red wine
2 tablespoons sugar
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground pepper
