Makes 6-8 servings

  • 1 lb ground beef
  • 1 medium onion chopped
  • 1 medium green bell pepper, chopped
  • 2-4 garlic cloves, diced and smashed
  • 1 (14 1/2 oz) can tomatoes, dice if using whole, do not drain
  • 1 (15 1/4 oz) can whole kernel corn
  • 1 (15 oz) can tomato sauce
  • 8 oz elbow macaroni
  • 1-2 tbsp chopped parsley
  • Salt and pepper
  1. Prepare elbow macaroni according to directions on package until al dente. 
  2. Save a little of the pasta water in case you need it later to loosen the sauce. 
  3. Brown meat in a large skillet, drain the fat and add the onion and bell pepper halfway through cooking.  Drain any remaining fat when onion and pepper are done and add garlic, stir in. 
  4. Add the meat mixture to the cooked macaroni, add the canned tomatoes, corn and sauce.  Mix together and add seasonings to taste.  You may need to add some of the pasta water to loosen the sauce if it is too dry.

Serves 4

  • 2 cups dry small tube-shaped macaroni or corkscrew macaroni
  • 2 medium tomatoes, coarsely chopped (about 2 cups)
  • 8 oz. mozzarella cheese, cut into cubes (about 2 cups)
  • 1/2 cup coarsely chopped fresh parsley
  • 1/2 cup prepared fat free vinaigrette
  • 1 cup Spicy Italian Croutons
  1. Prepare macaroni according to package directions. Drain in colander. Cool under cold water. Drain.
  2. In large bowl toss macaroni, tomatoes, cheese, parsley and vinaigrette until evenly coated. Toss macaroni mixture with croutons just before serving.

Makes 6 servings

  • 1 pkg (7 1/4 oz) macaroni & cheese dinner
  • 1 tbsp olive oil
  • 1 lb boneless skinless chicken breasts, cut into bite-size pieces
  • 1 can (14 1/2 oz) diced tomatoes and green chilies, drained
  • 1 can (14 1/2 oz) diced tomatoes, drained
  • 1 can (10 3/4 oz) condensed cream of chicken soup
  • 1/2 cup Mexican Style shredded cheese
  1. Prepare Dinner as directed on package. 
  2. Meanwhile, heat oil in large skillet on medium-high heat.  Add chicken; cook and stir 5 minutes or until lightly browned and cooked through.  Reduce heat to medium; stir in tomatoes and soup.  Cook 5 minutes stirring occasionally. 
  3. Add Dinner; stir until well blended.  Sprinkle with cheese; cover.  Cook 5 minutes or until cheese is melted.

Makes 1 servings

  • 2 pkg (14 oz each) Macaroni & Cheese Dinner
  • 1 cup mayo
  • 1/2 cup milk
  • 1/2 cup finely chopped celery
  • 1 small red pepper, finely chopped
  • 4 hard-cooked eggs, peeled, chopped
  • 1/2 cup sliced green onions
  1. Prepare Dinners as directed on package. 
  2. Add mayo, eggs, celery and peppers; mix well.  Sprinkle with onions. 
  3. Serve immediately.  Or cover and refrigerate until ready to serve.

Makes 6 servings

  • 1 pkg (7.5 oz) macaroni & cheese dinner
  • 1 lb boneless skinless chicken breasts, cut into chunks
  • 1 tsp dried oregano leaves
  • 1 can (14.5 oz) Italian-style stewed tomatoes, undrained
  • 1 pkg (10 oz) frozen green beens
  • 1/2 cup shredded mozzarella cheese
  1. Prepare Dinner as directed on package, using the light preparation directions. 
  2. Meanwhile, spray large nonstick skillet with cooking spray.  Add chicken and oregano; cook and stir on medium heat 3 minutes.  Stir in tomatoes with their liquid and beans.  Cook 5 minutes or until chicken is cooked through and mixture is heated through. 
  3. Combine prepared Dinner and chicken mixture; sprinkle with cheese.

Makes 4 servings

  • 1 pkg (14 oz) macaroni & cheese dinner
  • 1 lb ground beef
  • 1 large green pepper, chopped
  • 1 pkg (10 oz) frozen corn, thawed
  • 1 cup salsa
  1. Prepare Dinner in large saucepan as directed on package, cooking Macaroni for just 8 minutes. 
  2. Meanwhile, brown meat with green pepper in skillet; drain. 
  3. Add meat mixture, corn and salsa to prepared Dinner; mix well.  Cook until heated through, stirring occasionally.

  • 1 lb ground beef
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 can (14 1/2 oz) stewed tomatoes, undrained
  • 1 can (16 oz) kidney beans, drained
  • 1/3 cup sour cream
  • 1/3 cup shredded sharp cheddar cheese
  1. Prepare Dinner as directed on package, using Light Preparation directions.
  2. Meanwhile, brown meat with chili powder and cumin in large nonstick skillet on medium heat.  Add tomatoes with their liquid and the beans; simmer 3 minutes, stirring occasionally.
  3. Stir in prepared dinner; cook 3-5 minutes or until heated through, stirring occasionally.  Top with sour cream and cheese.
