Serves 6

  • 1 lb ground beef
  • 1 pkg (6 oz) stuffing mix
  • 1 tsp dried oregano leaves
  • copped roasted red peppers
  • traditional crumbled feta cheese
  1. Preheat oven to 375°F.  Mix meat, stuffing mix, 1 cup water and the dried oregano leaves until well blended.  Press evenly into 12 medium muffin cups sprayed with cooking spray; make an indentation in center of each with back of a spoon. 
  2. Spoon 3/4 cup chopped roasted red peppers evenly into indentations in meatloaves. 
  3. Bake 30 minutes or until meatloaves are cooked through (160°F).  Top evenly with 3/4 cup cheese; continue baking 5 minutes or until cheese is melted.  Let stand 10 minutes before serving.

  • shredded Mozzarella cheese
  1. Preheat oven to 375°F.  Mix meat, stuffing mix, 1 cup water and the Italian seasoning until well blended.  Press evenly into 12 medium muffin cups sprayed with cooking spray; make an indentation in center of each with back of a spoon. 
  2. Spoon 3/4 cup spaghetti sauce evenly into indentations in meatloaves.

  • 2 beaten eggs
  • 1 box chicken stuffing mix (6 oz)
  • 1/2 cup barbecue sauce
  • 1/2 cup onion, chopped
  1. Preheat oven to 400°F. 
  2. Mix ground beef, water, eggs, stuffing mix, 1/4 cup of the sauce and onion. 
  3. Shape meat mixture into 4 oval loaves on foil-covered baking sheet; top with remaining sauce. 
  4. Bake 30 minutes or until loaves are no longer pink in the center.

Serves 8

  • savory herbs stuffing mix (6 oz)
  • 1 jar (14 oz) spaghetti sauce
  • 2 cloves garlic, minced
  1. Preheat oven to 400°F. 
  2. Mix ground beef, water, eggs, stuffing mix, 1/4 cup of the sauce, and garlic. 
  3. Shape meat mixture into 4 oval loaves on foil-covered baking sheet; top with remaining sauce. 
  4. Bake 30 minutes or until loaves are no longer pink in the center.

Serves 2

  • 2 beef tenderloin fillets (4 oz each)
  • 1 tbsp butter
  • 1/2 cup shredded zucchini
  • 1/2 of a small onion, finely chopped
  • 3/4 cup stuffing mix for chicken
  • 1/2 cup shredded cheddar cheese
  1. Preheat broiler.  Heat ovenproof skillet on medium-high heat.  Add zucchini and onions; cook and stir 2 minutes or until vegetables are tender.  Remove from heat.  Stir in dry stuffing mix and cheese until well blended.  Remove from skillet.  Add meat to skillet; top evenly with the stuffing mixture. 
  2. Broil, 6 inches from heat source, 5 minutes or until stuffing is lightly browned.

  • shredded Mexican style cheese
  1. Preheat oven to 375°F.  Mix meat, stuffing mix, 1 cup water and the chili powder until well blended.  Press evenly into 12 medium muffin cups sprayed with cooking spray; make an indentation in center of each with back of spoon. 
  2. Spoon 3/4 cup salsa evenly into indentations in meatloaves. 
  3. Bake 30 minutes or until meatloaves are cooked through (160°F).  Top evenly with 3/4 cup cheese; continued baking 5 minutes or until cheese is melted.  Let stand 10 minutes before serving.

  • 1/2 cup green pepper, chopped
  1. Preheat oven to 400°F. 
  2. Mix ground beef, water, eggs, stuffing mix, 1/4 cup of salsa, and pepper. 
  3. Shape meat mixture into 4 oval loaves on foil-covered baking sheet; top with remaining salsa. 
  4. Bake 30 minutes or until loaves are no longer pink in the center.
